What is grown, raised and cooked in the valley

FROM VALLEY TO TABLE

In Malinalco, you eat what the valley gives.

Malinalco sits among mountains, with spring water running down from the hills and a mild climate almost all year. That mix turns the valley into an orchard: fruit, corn, agave and trout raised in cold, clean water.

Before sitting down at a restaurant, find out where your meal comes from: the Wednesday market, the trout farms and the kitchens where recipes pass from one generation to the next.

THE WEDNESDAY MARKET

Market day

Every Wednesday, local growers and farmers come down to the center of Malinalco to sell their harvest. It is the best place to understand the town: seasonal fruit and vegetables, seeds, cheeses, bread, honey and crafts, with rebozos and textiles among the stalls.

Come hungry. Between stalls you will find sopes, tlacoyos, gorditas, tamales and quesadillas made on the spot, with café de olla or pulque.

MALINALCO TROUT

Spring water, fresh trout

Since the late 1970s, the springs in the upper part of town have fed rainbow trout farms. A few minutes from the center, along the Camino a las Truchas, you can see how they are raised, catch your own and eat it freshly cooked in the trout gastronomic corridor.

Something happens here that you rarely see anywhere else: a cold-water fish growing among banana trees. At the farm, the trout ponds sit in the middle of a banana grove, and icy spring water runs beneath tropical trees. It is Malinalco in a single image: a valley where mountain cold and tropical heat meet.
